But... wouldn't that (having two sides 180deg out) mean there would have two
be two different physical sinewaves on the two sides? Hence two different
phases?

Two phase power is 90 degrees out of phase. If I remember from class... The
big bonus was being able to make a motor with two sets of windings and one
set is always in a good position for giving torque.
Three phase power is 120 degrees out of phase with each other, what you
would expect.
Household power is 180 out of phase. They are just the inverse of each
other.
