How about ejabberd?

We use it for our inter-office instant messaging at the company I'm
currently working for.
the server side is web based, very easy to work on, and there are numerous
IM clients that work with Jabber, we use pandion on our windows based
workstations. and Pidgin (formerly Gaim) on our linux workstations.
