[ale] OT: Moving email from one web host to another.

Any tips for moving email accounts when moving domains from one web host
to another?

Obviously, all the email accounts will be replicated on the new server
before hand but outside of having the old server also forward emails to
a "neutral account" e.g. gmail, is there anything else to be done to
keep emails from sliding into the abyss as the new DNS info propagates?
Or, am I missing something obvious in setting up the dns records?
