For a true non-tech-guy setup, I'd look at at a distribution with a web
management interface. Here are two I've seen mentioned a lot.
http://www.clearfoundation.com/ (formerly clarkconnect, based on red hat)
http://ebox-platform.com/ (based on ubuntu)
