I use:
SMTP -> Postfix -> virtual Maildirs
Then
Dovecot -> IMAP
I've used Cyrus imap server in the past and found dovecot is much easier to
configure and use.
Postfix was pretty easy to configure for virtual domains and virtual users.
I haven't used Spamassasin mostly because all email access is done with imap
with a Thunderbird client. With the adaptive filters built into T-bird, I
haven't had much motivation to jump into spamassasin. Maybe one of these days I
will.
