You can do practically anything you can do with a Linux box or PC (minus 
a few PC-only games). Install X11. Stick Open Office and The Gimp on 
there. Rip some music, make mix discs, watch some DVDs. All the iLife 
stuff is fun to play with. iTunes is the king. If you write any code, 
get BBEdit. If you do a lot of remote server stuff... download 
TelnetLauncher and Fugu. <a  rel="nofollow" href="http://www.versiontracker.com";>http://www.versiontracker.com</a> is your friend. 
You can find an endless assortment of freeware and shareware apps there.

I do a lot of IMAP email, so I use Thunderbird instead of Mail.app. 
Mail.app as a few quirks (with my mail server at least). Firefox would 
be my suggested browser. Safari is okay, but often has problems with CSS 
heavy sites and can hang up occasionally.
