For me it used to be qedit for dos, Crimson Editor for Windows, and pico
for unix. Now it's vim for unix and Windows, and bbedit for Mac.
Syntax highlighting is the biggest feature for me.
I'm still looking around, though. :D I'm interested in "folding" text
editors.
