With Mailman this can be done in the web config interface, you just have to add
some text patterns to bounce_matching_headers.  I have had decent success with:

   subject: .*out.*office.*
   subject: .*Out.*Office.*
   subject: .*theoffice.*
   subject: .*Holiday
   subject: .*Vacation
   subject: .*Automated Response
   disposition-notification-to: .*
   subject: .*on leave.*
   subject: .*On Leave.*
