[ale] AVI to MPEG ?

For a while now I've been trying to figure out how to convert AVIs
(captured with xawtv) to MPEGs.  The best I've done is with "avi2yuv"
that will let me get a video-only mpeg and a separate audio file.
Supposedly, "mplex" will glue those things together into a single mpeg
but it doesn't seem to behave.

Does anyone have a fool-proof formula for converting AVIs to MPEGs?  Or,
even better, creating an MPEG directly from a V4L device?
